A little history...
In the Middle Ages, and even today, there is no such thing as a stopover town: travellers choose where to stop along the way, depending on their mode of transport and their wishes.
In the Middle Ages, depending on their means, pilgrims opted for free overnight accommodation: Hôtel-Dieu or hospitals for "poor passers-by", religious establishments that practised works of mercy (hospitality): priories, abbeys, commanderies. However, there are rarely any direct links between the "hospitable" function and the original location of the religious establishment. If pilgrims were able, they would go to an inn like other travellers.
